baby porridge how-to

Lil' Kai turned six months a few days back which means this mama has permission from everyone necessary to don her kitchen gear and start dishing out baby porridge because this mama is in desperate need of sleep. Yup, you read right - sleep.

When lil' Kai was born and up until about about two months old, he slept like a log which meant this mama could afford some decent sleep time at night. Everyday and night with him was "milk-burp-diaper change-sway-sleep-repeat" {with bath time thrown in between, of course}.

Unfortunately, when months three and four came by so did my four-hour-block of sleep. He needed to be fed or he'll be screaming bloody murder at 1 am and 5 am, give and take half an hour. Then at five months, my four-hour-block of sleep was chopped in half and now at six months, le sigh. Let's just say whenever I walk into the office with a cuppa in hand, my boss knows not to ask me how I am or if I slept well the night before.
SO IF THERE ARE ANY SKINCARE BRANDS OUT THERE LOOKING TO PROMOTE OR RE-PROMOTE AN EYE CARE PRODUCT, YOU HAVE THE PERFECT GUINEA PIG HERE. { WINK! WINK! NUDGE! NUDGE! }
Anyway, my little boy is now at six and a half ounces of milk per each four hour feed and is slowly inching to seven ounces which I suspect will happen in about a week or two more. Which is why this sleep deprive mama is busting out the baby porridge - at the rate he's going, he's going to be hungry every hour if he's only fed milk.

So this morning, while the kids entertained themselves with Teletubbies - I was in the kitchen preparing this.

It's my version of the basic baby porridge - rice, sweet potato and carrots in pure chicken stock with egg yolk PLEASE READ NOTE BELOW.

Serving: Approximately 2-3 bowls.
Prep Time: 10-15 minutes.
Cook Time: 45 minutes stove top; 2 hours crock pot.

Ingredients
1/4 cup rice - you can opt to use brown/red/seven grain rice.
3 cups pure chicken stock.
3 ounces sweet potato - cubed.
3 ounces carrots - cubed.
1 egg yolk - lightly beaten.

Method
Pour rice into the crock pot and rinse with cold water a few times. Discard the cloudy water and pour the chicken stock in. Add the cubed up carrots and potatoes then leave it to cook on high for about 2 hours or until rice is soft. If using egg yolk, lightly beat the egg yolk and add to the porridge. Stir a few times and let cook for an additional 1-2 minutes. Blend well with blender and let cool before serving to baby.

NOTE I KNOW SOME PARENTS ARE CONCERNED ABOUT FEEDING A BABY LESS THAN 12 MONTHS OLD EGGS SINCE EGGS ARE IN THE TOP 8 LIST OF ALLERGENS: MILK, EGGS, PEANUTS, TREE NUTS, SOYBEANS, WHEAT, FISH AND SHELLFISH. RECOMMENDATIONS FOR INTRODUCING EGGS TO BABIES HAVE BEEN CHANGING AND MOST PEDIATRICIANS AGREE THAT IT IS THE WHITE OF THE EGG THAT IS ALLERGENIC AND NOT THE YOLK SINCE THE YOLK OF AN EGG DOES NOT CONTAIN THE PROTEINS THAT CAUSES AN ALLERGY TO EGGS. IT IS ALSO VERY RARE FOR ANYONE TO BE ALLERGIC TO THE YOLK OF AN EGG; THE EGG WHITES ON THE OTHER HAND CONTAIN 4 TYPES OF PROTEINS { OVOMUCOID, OVALBUMIN, OVOTRANSFFERIN, LYSOZYME } THAT CAN RANGE FROM MILDLY ALLERGENIC TO HIGHLY ALLERGENIC.
HOWEVER, IF YOUR FAMILY HAS A HISTORY OF EGG ALLERGIES THEN IT IS BEST TO WAIT UNTIL AFTER 12 MONTHS OLD TO INTRODUCE EGG YOLKS EVEN IF RECOMMENDATIONS FOR INTRODUCING EGGS TO BABIES ARE CHANGING.
